Gastamo Group expands with a neighborhood Italian restaurant opening December 2025
DENVER, CO (November 12, 2025) — Gastamo Group, the Denver-based hospitality team behind popular concepts like Perdida, Park Burger, Park & Co, and Lady Nomada, is set to debut a new Homegrown Tap & Dough in Castle Rock this December. Located at the corner of Third & Wilcox, the restaurant marks Homegrown’s sixth location and Gastamo Group’s 15th overall, designed as a welcoming neighborhood hub for families, friends, and game day fans alike.
Homegrown Tap & Dough is known for approachable Italian classics, including hand-tossed pizzas, quality pasta dishes, and crave-worthy starters, paired with a curated selection of Colorado craft brews on tap. The Castle Rock location debuts a fresh “elevated ranch” design with rustic wood finishes, Pendleton fabrics, and Western accents that nod to the town’s heritage while preserving the warm, communal energy guests already love.
“We’re serving Italian comfort with Colorado flair; hand-tossed pies, new burgers like the Bourbon Bacon Jam, and lighter, protein-forward bowls,” said Jean-Philippe Failyau, co-founder of Gastamo Group. “Pair it with Colorado craft brews and hand-crafted cocktails, and guests can find something they’re excited to come back for.”
The 6,020-square-foot restaurant features 226 indoor seats and a 35-seat corner patio where garage doors open to connect the dining room with the vibrant energy of Downtown Castle Rock. Guests can book private and semi-private dining rooms, designed for year-round events, including holiday parties, graduations, and rehearsal dinners. In the semi-private room, a custom reeded kitchen window offers a behind-the-scenes view that brings the kitchen’s energy into the space while keeping conversation easy. Tastefully placed TVs ensure the game is in view without overwhelming the atmosphere.
Signature touches set the Castle Rock location apart, like a custom elk head by renowned artist Dolan Geiman, locally crafted millwork, and a curated free-play vintage arcade sourced by Chattanooga Pinball, which adds a playful energy for families and groups.
The Castle Rock menu leans into craveable, shareable flavors with new savory starters like Spinach & Artichoke Dip and Garlic Knots alongside signature hand-tossed pizzas and high-quality pasta dishes. Guests will also find gluten-free and vegetarian options throughout the menu, as well as a curated lineup of Colorado craft brews and hand-crafted cocktails.
